Our quality approach to sourcing cocoa and hazelnuts

The careful selection of cocoa and hazelnuts is a fundamental element of our commitment to quality and ingredient sourcing, helping us deliver the iconic Ferrero Rocher experience.

We choose our suppliers carefully

We carefully select our ingredients and suppliers. We work closely with them to maintain high-quality standards during the production processes, to support them in caring for our ingredients right up until we receive them, preserving their quality in line with Ferrero quality standards.

“Knowing what’s in the bag” 

At Ferrero, we have a saying - “Sacco conosciuto”, which means “knowing what’s in the bag”. This philosophy is the foundation of Ferrero Farming Values and reflects our commitment to knowing where our key ingredients come from and how they are produced. Our focus on quality ingredients, nurtured and sourced through objective and long-term relationships with suppliers and farmers, continues to guide our commitment to quality, traceability and continuous improvement every step of the way. 

We source our raw materials in line with specific rules concerning their origin, harvesting, and manufacturing. We also apply quality and traceability procedures to preserve the taste, smell, texture, flavor and nutritional characteristics of our raw materials. Ferrero globally reached 97% traceability back to farmer level for hazelnuts, and cocoa beans are 98% traceable back to farm polygon maps.

Once we have chosen our ingredients, our focus on quality continues as we craft them into Ferrero Rocher, paying meticulous attention to detail at every step of the process without adding colours or preservatives.

Taste, taste and taste again

At Ferrero, our Food Safety and Quality panels involve more than 2000 certified tasters around the world. They are deeply trained to evaluate the appearance, aroma, texture, taste and flavor of our products.

Distinctively Ferrero Rocher

Flavio Roccia, our Head of Product Observatory, says: “The uniqueness of Ferrero Rocher is much more than the sum of its ingredients.” From the delicate crunchy hazelnut in a delicious creamy filling, to the crispy wafer shell covered with milk chocolate and gently roasted hazelnut pieces – it’s all about maintaining the perfect balance of contrasting layers.

Passionate about hazelnut quality

The whole hazelnut at the heart of each Ferrero Rocher must be the right size to guarantee the same crunchy experience every time and it must be roasted in a specific way to preserve its freshness and essential qualities. We send our hazelnuts through a 35m long roaster, at a speed of one metre a minute, to guarantee the perfect roast. We use more than three hazelnuts in every Ferrero Rocher.
